15mm should do it, as a semi-logical guess.

Here's my thinking:

Anniversary wheels are 18x7.5j with a 38 offset, so they're 0.75 inches narrower (0.75 inches = 19mm)

Your offset is 5mm lower than the anniversary wheels, so they sit 5mm further out, so subtract that from the extra width and you've got approximately 14mm extra width (19mm-5mm).

Add in the 15mm spacer and you should be plenty clear of the coilovers. 10mm would probably even do it, but I'd say 15mm to be safe.

What part of the wheel is hitting? And how badly is it hitting?

Probably best to find someone with a similar set up to confirm for sure, but imo 15mm should do it.

Was thinking 15mm myself but didn't want to much poke...its the top of the alloy that is touching quite badly without even turning the wheel.

Touching what?  The wheel does not move if you turn the wheel, the only thing it can touch is the arch.

When you put the wheel on the hub the alloy hits the coilover.

8mm or 10mm H&R hubcentric would be our recommendation but you'd then be best to at least match at the rear for visual look as well.
